Antioxidants are compounds which control the level of reactive oxygen species (ROS) including free radicals in the cells, reducing the rate of redox reactions. These substances prevent damage to DNA, cell membranes and are necessary for cells molecules.
Biologists have found that white mushrooms are a source of ergothioneine connection that is part of the red blood cells and is an antioxidant. In addition, in the tissues of these organisms were found high levels of glutathione, which determines the redox environment inside cells.
According to free radical theory, aging is due to accumulation caused free radical damage inside cells. It is believed that antioxidants, neutralizing the radicals, rejuvenates the body. On the other hand, ROS are required for the process of destruction of defective cells. Thus, reactive oxygen species inhibit the emergence of malignant cells.
